For over 30 years, the kitchen of Cantina Bentivoglio has welcomed lovers of good food until late at night. Born in 1977, originally from Manfredonia and a Bolognese by adoption, Pasquale Troiano has been the Executive Chef of Cantina Bentivoglio since 2007. A graduate of the hotel management institute in Vieste, he built his career with experience in prestigious restaurants and hotels throughout Italy, including starred restaurants and places specializing in fish cuisine.
His dishes tell a story of balance between his Apulian origins and his Bolognese growth: modern cooking techniques and combinations inspired by Mediterranean flavors blend with a deep respect for Emilian recipes, enhancing their authenticity with a fresh and contemporary touch.

From classic tagliatelle, tortellini and tortelloni, to the more sophisticated triangles, mezzelune, orecchiette, spaghetti alla chitarra, garganelli and stricchetti: each pasta shape is rigorously hand-rolled and becomes the protagonist of our dishes of the day, often inspired by the flavours of the sea.
